If you're talking about having Jack run directly into the 2nd medusa head (whether he has a shield or not), then you are correct -- it won't make a noise. The screaming noise is due to the medusa head hitting a flame. It'll only make this special noise when it dies on a flame, not when it dies by colliding with Jack.
